Emmy’s Kale Hummus is deliciously healthy…
1 x 400g tin of organic chickpeas (drained)
2 cloves of garlic (peeled)
5 tablespoons of organic olive oil
1 heaped tablespoon of tahini
Juice of 1 lovely organic lemon
1 cup of tightly packed organic kale leaves (be sure to remove the stalks)
How to make it:
Simply place all of the ingredients into your food processor with 3 tablespoons of water and blend until smooth. I have to whizz mine for a good few minutes to get a smooth consistency.
To store, scoop it into an airtight container and place in the fridge for up to a week (if it lasts that long).
