An enduring favourite, the humble blueberry muffin gets a CC makeover… Low sugar, low fat, low calorie, high protein, high fibre – the perfect, portable diet snack!
Ingredients:
1 cup wholewheat flour (or 1/2 plain, 1/2 wholewheat)
2 scoops Blueberry Smoothie Super Protein
1 tsp baking soda
1 cup rolled oats
1/2 tsp salt
2 tsp cinnamon
1/2 cup sweetened applesauce
2 egg whites
1/4 cup Xylitol
1/2 cup water
1 cup fresh (or frozen, defrosted) blueberries
Directions:
Mix dry ingredients together, then add wet except for blueberries.
Mix well and then fold in blueberries.
Bake at 350F (175C) for 25-30 min or until a toothpick inserted comes out clean.
Serve with fat free Greek yoghut for an extra protein kick!
