More tasty high protein baking for you! A couple of these banana flaxseed muffins thrown into your bag before heading out, make for a delicious and well-balanced snack.
Ingredients
1/2 cup ground flax seed (best ground fresh in a coffee grinder)
3 medium bananas, mashed
1/4 cup coconut oil
2 egg whites
1-1/2 cups protein powder (I like
BSN Lean Dessert in Banana Cream Pudding flavour)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup whole flax seeds
Sweeten batter to taste with Xylitol or Stevia.
Directions
Preheat oven to 350-degrees and lightly grease your muffin pan (I use 1-calorie spray).
In a large mixing bowl, beat together bananas, oil, sweetener and egg whites.
In a separate bowl, mix together the remaining ingredients.
Spoon batter into prepared muffin pan.
Bake in preheated oven for about 12-15 minutes or until toothpick inserted into muffin comes out clean.
You can top with a slice of banana or a walnut half for extra prettiness!

I made these the other night and they were amazing. Big kudos from my work staff too (personal trainers). I also substituted bananas for pumpkin and sweetner for cinnimon on a second batch! They were pretty fantastic as well!
