Low Carb Protein Pancakes

A quick, easy and tasty breakfast!

Makes 2 servings (approx 2-3 pancakes per serving).

Ingredients:

16 large egg whites (or 1 1/3 cups liquid egg whites)
2 scoops low-fat, low-carb protein powder (needs to be a tasty one!)
60g oat bran
1 tsp vanilla essence (or 3 tbsp 100% cocoa powder for chocolate pancakes)
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
Additional sweetener or honey if desired (not included in nutrition facts)

Directions:

Blend all ingredients together
Preheat pan to medium-high heat and spray with low calorie cooking spray
Pour in enough mixture to coat the pan and cook for about 1-2 minutes per side

Topping Suggestions (all these work well together too!):

Peanut or almond butter
Fresh berries
Banana
Sliced almonds
Greek yoghurt
Shredded coconut
Dark chocolate chips
